DIY Nourishing Popsicles

Popsicles TextAfter months of waiting and hoping, it’s finally here: Summertime!

As much as almost everyone loves this time of year, there is the perennial issue of being hungry and too hot to cook.  In our houses this summer we’re going to be focusing on interesting salads, slow cooker meals, and other tricks to stay nourished and cool – and we’ll be sharing them, don’t worry.

This week we’re going to start with Popsicles.

The premise is ridiculously simple: build a macronutrient-balanced green smoothie, and freeze it.

If you’re new to the idea of adding protein and fat to your green smoothie to make it delicious AND nourishing, help yourself to our handy, illustrated –> Smoothie Matrix <–.

Here’s why:

1. When you have protein + healthy fat + carbohydrate you get a balanced meal or snack that fills your belly & nourishes your body.
2. When you add protein + fat + greens to your smoothie you get a meal {or snack} without cooking.
3. When you freeze your balanced smoothie, you get a nourishing popsicle.
4. When you have something tasty and frozen on a hot day you get a treat.
5. When you have a cold treat on a hot day you feel happy & refreshed.

Here’s how:

1. Fancy popsicle molds {these are the ones we use}.
2. Plastic or paper cups  with popsicle sticks in them.
3. A covered container – once the smoothie is frozen, scrape it into your food processor, process it a few times, and you’ve got ice cream {or just do what Liz does and let it sit on the counter for 10 minutes until it’s soft enough to scoop}!
4. An ice cream maker.

But What If I Don’t Want a Smoothie?

First off, really?  Well, ok.  Here are some other refreshing and health-promoting treat ideas {they are not, however macronutrient-balanced, so don’t use them to replace a meal, please}:

1. Water Kefir.

Oh yes, friends, you can freeze the finished product and make it into a popsicle of probiotic goodness.  Check out some flavoring ideas –> here <– and –> here <–.

2. Nettle tea.

We freeze it in ice cube trays, and then use it as ice in our sparkling water with a squeeze of lemon juice.  Read more about Nettles –> here <–.

3. Coconut Bars.

Because of the coconut oil in them, they keep best in the freezer, which makes them a perfect cool treat on a summer evening.  Get the recipe –> here <–.

4. Frozen fruit.

Cubes of melon, grapes and berries are all refreshing to snack on when they’re frozen; they also make great ice cube substitutes.

GRUB Summer Smoothie

Ingredients {makes about 3 cups}
1 can full-fat coconut milk
3 Tb hemp hearts
3 – 4 kale leaves, washed & stemmed
1 1/2 cups frozen mango
2 cups frozen strawberries

1. Blend all ingredients in a high-powered blender until smooth.
2. Pour into popsicle molds, and freeze.
3. Enjoy!

    Holy yum!! Thank you for this – I was beginning to wonder how I would get my two-year old to eat anything but cottage cheese and oatmeal ever again. She tired of my spinach blueberry soy milk smoothie popsicles long ago, and these new flavors totally do the trick … for now. You rock.
