Pizza Protein Bites Text

Pizza’s a big deal in our house.  It’s my 6 year-old’s favorite food, and, who am I kidding, it’s her dad and my favorite food too.  But pizza isn’t exactly a nourishing food, so it’s more of a treat for dinner than a regular occurrence.

But, man, whoever invented the pizza pie sure got the flavor profile right: tangy tomato, rich cheese, Italian spices, and then all the toppings just add to the deliciousness.  So when I realized I needed a non-sweet protein bite recipe, I knew right away that the flavor had to be “pizza.”

Pizza is also fun: it doesn’t take itself seriously, it doesn’t come with a helping of deprivation, and it’s great to share.  That’s why I love this protein bite recipe: it’s nourishing, allergen-free, dairy-free, and gluten-free, sure, but it also isn’t serious – it’s just yummy and fun to share!  It’s exactly what I want my nourishing foods to be.

Pizza Protein Bites

Ingredients
1/4 cup raw pumpkin seeds
1/4 cup raw sunflower seeds
1/2 cup sun-dried tomatoes {dry, not packed in oil or water}
3/4 tsp dried oregano
1/2 tsp garlic powder
2 1/2 Tb nutritional yeast
pinch of sea salt
squeeze of lemon
red pepper flakes {optional}

Directions
1. You can start by soaking the seeds for 4 – 8 hours to maximize digestibility, then drain them and proceed with the recipe.  This step is optional, though.
2. Put sun-dried tomatoes in a bowl, cover with hot water, and let soak for 10 minutes.
3. While tomatoes are soaking, combine seeds, oregano, garlic powder, nutritional yeast and sea salt to the bowl of your food processor, and process for a minute or two, until a coarse mixture forms.
4. Drain the tomatoes {reserve the soaking water in case you need it for the texture later} and add them to the seed mixture along with the squeeze of lemon.  Process until mixture starts clumping together like dough.
5. Scoop pieces of mixture with your fingers, and roll them into a ball.  If the mixture is too dry to stick together, add some of the tomato soaking water, 1 tsp at a time, and re-process until it’s sticky enough to stick {you shouldn’t need more than 1 or 2 tsp}.  Roll each protein bite in red pepper flakes, if you’d like.
6. Store in a covered container in the fridge for up to a week.

    Might take me a minute, next step: looked up ‘how to make sun-dried tomatoes’…followed by used food dehydrator for sale. 🙂

    Can’t wait to try these!
    Sun dried tomatoes can be made in the oven. Cooked on low for a lengthy time. I just made some a few weeks ago. Super easy and good! Just google for recipes. Can’t quite remember exact setting or time of drying, but I’m sure there are many recipes with different seasonings out there!
